Slow Cooker Meatloaf

- 1 0.5 lb ground chuck
- 1 egg, beaten
- 0.3 cup milk
- 1 0.5 tsp salt
- 2 slice bread, crumbled
- 0.5 small onion, finely chopped
- 2 tbsp green bell pepper, finely chopped
- 2 tbsp celery, finely chopped
- 0.3 cup ketchup
- 3 medium potatoes, peeled and cut into chunks
- 1 tbsp butter, melted

Mix egg, milk, salt, and crumbled bread in a large bowl. Let stand a few minutes to soften bread.

Add ground chuck, onion, green pepper, and celery; mix thoroughly.

Shape into a loaf. Place in the bottom of a slow cooker.

Spread ketchup over the top of the meatloaf.

Toss potato chunks in melted butter; arrange around the sides of the meatloaf in the slow cooker.

Cover and cook on HIGH for 1 hour, then switch to LOW and cook for 8–9 hours.

Slice and serve with potatoes from the slow cooker.
