Slow Cooker Lemon Roast Chicken

- 4 lb whole chicken
- 1 tsp dried oregano, divided
- 2 clove garlic, minced, divided
- 2 tbsp butter
- 0.3 cup water
- 3 tbsp fresh lemon juice
- 0.5 tsp salt
- 0.3 tsp black pepper

Wash chicken and pat dry. Season with salt and pepper.

Sprinkle half the oregano and half the garlic inside the cavity.

Melt butter in a large skillet and brown chicken on all sides.

Transfer to slow cooker. Sprinkle with remaining oregano and garlic.

Add water to the skillet and stir to loosen any browned bits. Pour into slow cooker.

Cover and cook on LOW for 8 hours. In the last hour, add lemon juice.

Transfer chicken to cutting board. Skim fat from drippings. Carve and serve with pan juices.
