Slow Cooker Italian Chicken

- 3 lb chicken, cut into pieces
- 1 tsp seasoned salt
- 0.3 cup all-purpose flour
- 0.5 tsp salt
- 1/8 tsp black pepper
- 2 tbsp grated Parmesan cheese
- 0.5 tsp paprika
- 0.5 cup chicken stock
- 8 oz canned mushrooms, drained
- 2 zucchini, sliced into rounds
- 2 tbsp fresh parsley, for garnish

Sprinkle chicken pieces with seasoned salt.

In a shallow bowl, combine flour, salt, pepper, Parmesan, and paprika. Coat each chicken piece in the mixture.

Place sliced zucchini in the bottom of the slow cooker. Pour chicken stock over zucchini.

Arrange coated chicken pieces on top.

Cover and cook on LOW for 6–8 hours until chicken is very tender.

Turn to HIGH, add mushrooms, cover and cook 10–15 minutes more.

Garnish with freshly ground pepper and parsley. Serve over pasta or rice.
