Slow Cooker Daube of Beef

- 5 count shallots, thinly sliced
- 4 count cloves garlic, minced
- 2 count medium carrots, sliced 1/4-inch thick
- 0.3 cup baked ham, chopped
- 1 count strip orange peel (1/2 x 3 inch)
- 1 count dried bay leaf
- 2 0.8 lb lean boneless beef chuck, cut into 1½-inch cubes
- 0.3 cup all-purpose flour
- 0.3 tsp black peppercorns
- 0.3 tsp dried thyme
- 1/8 tsp ground cloves
- 0.5 tsp dried sage
- 2 tbsp balsamic vinegar
- 0.8 cup dry red wine
- 0.3 cup brandy
- 2 tbsp flour blended with 2 tbsp softened butter
- 2 tbsp chopped fresh parsley

In the slow cooker, combine shallots, garlic, carrots, ham, orange peel, and bay leaf.

Coat beef cubes with the 1/4 cup flour and add to the slow cooker.

Sprinkle the beef with peppercorns, thyme, cloves, and sage.

Drizzle with balsamic vinegar. Pour in the red wine and brandy.

Cover and cook on LOW until beef is very tender when pierced, 8 to 9 hours.

Remove and discard the bay leaf and orange peel. Blend in the flour-butter mixture to thicken the sauce.

Increase to HIGH, cook uncovered until sauce thickens, about 10 minutes.

Sprinkle with chopped parsley and serve.
