Slow Cooker Chicken Coq au Vin

  • 2 frying chickens, cut up
  • 12 small whole onions
  • 0.5 lb mushrooms, sliced
  • 1 cup chicken stock
  • 1 cup dry white or red wine
  • 3 tbsp all-purpose flour
  • 3 tbsp butter
  • 1 tsp salt
  • 0.5 tsp dried thyme
  • 0.3 tsp black pepper

Instructions

    Place onions in the bottom of the slow cooker; add all other ingredients except flour and butter.

    Cook on Low 8–10 hours or High 3–4 hours until chicken is very tender.

    To thicken, remove ¼ cup liquid; melt butter in a saucepan; stir in flour and liquid until smooth.

    Return to cooker, stir, and cook on High 15 minutes until thickened. Serve over egg noodles.
