Slow Cooker Jambalaya

  • 1 whole chicken, cut into pieces
  • 3 whole onions, chopped
  • 1 whole carrot, sliced
  • 1 clove garlic, minced
  • 0.5 tsp dried oregano
  • 0.5 tsp dried basil
  • 1 tsp salt
  • 14 oz canned cut tomatoes
  • 1 lb raw shrimp, shelled
  • 2 cup cooked rice

Instructions

    In slow cooker, combine chicken with onions, carrots, garlic, oregano, basil, salt, pepper, and tomatoes.

    Cook on LOW for 4 to 5 hours until chicken is cooked through.

    Add shrimp and cooked rice.

    Cook on HIGH for 30 to 40 minutes until shrimp are pink and done.

    Adjust seasoning and serve.
