Slow Cooker Chalupa

  • 3 lb pork roast
  • 1 lb dried pinto beans
  • 7 cup water
  • 0.5 cup onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp salt
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp dried oregano
  • 4 oz canned chopped green chile peppers

Instructions

    Place all ingredients in a dutch oven or slow cooker.

    Cover and cook on Low about 5 hours until roast falls apart and beans are done.

    Uncover and cook 30 more minutes to reach desired thickness.

    Serve with corn chips, chopped tomato, avocado, onion, shredded lettuce, cheddar, and hot sauce.
