Simon and Seaforts Spinach Salad

  • 3 large hard-boiled eggs
  • 1 0.5 tsp prepared yellow mustard
  • 3 tbsp cider vinegar
  • 3 tbsp sugar
  • 16 oz fresh spinach
  • 4 strips bacon
  • 2 stalks green onions, thinly sliced
  • 0.3 cup slivered almonds

Instructions

    Cook bacon until crisp. Drain, reserving 1 to 2 tablespoons of the bacon grease. Crumble bacon and set aside.

    Separate egg whites from yolks. Mash yolks with a fork and add mustard, vinegar, and sugar. Mix well to form the dressing.

    Chop egg whites and set aside.

    Cut or tear spinach into a salad bowl.

    Toss spinach with the egg yolk dressing. Add reserved bacon grease and toss again.

    Top with chopped egg whites, almonds, green onions, and crumbled bacon. Serve immediately.
