- 3 tbsp butter
- 0.5 cup all-purpose flour
- 1 count small onion, chopped
- 0.4 cup chicken stock
- 8 oz Velveeta cheese, cubed
- 0.3 cup heavy whipping cream
- 10 oz frozen chopped spinach, thawed and water squeezed out
- 4 dash Tabasco sauce, to taste
- 4 tbsp sour cream, for topping

Melt butter in a saucepan over medium-high heat. Add chopped onion and sauté until golden brown.

Add flour to make a roux. Stir and cook 1–2 minutes.

Add chicken stock gradually, stirring until a creamy consistency forms.

Slowly add cubed Velveeta, stirring until fully melted.

Add heavy whipping cream and stir to incorporate. Fold in drained spinach.
