  • 3 tbsp butter
  • 0.5 cup all-purpose flour
  • 1 count small onion, chopped
  • 0.4 cup chicken stock
  • 8 oz Velveeta cheese, cubed
  • 0.3 cup heavy whipping cream
  • 10 oz frozen chopped spinach, thawed and water squeezed out
  • 4 dash Tabasco sauce, to taste
  • 4 tbsp sour cream, for topping

Instructions

    Melt butter in a saucepan over medium-high heat. Add chopped onion and sauté until golden brown.

    Add flour to make a roux. Stir and cook 1–2 minutes.

    Add chicken stock gradually, stirring until a creamy consistency forms.

    Slowly add cubed Velveeta, stirring until fully melted.

    Add heavy whipping cream and stir to incorporate. Fold in drained spinach.
