Shrimp Stir Fry

  • 1 0.5 cup broccoli florets
  • 1 small red bell pepper, julienned
  • 1 small green bell pepper, julienned
  • 2 tbsp vegetable oil
  • 1 lb shrimp, peeled and deveined
  • 1 tbsp cornstarch
  • 2 tsp brown sugar
  • 1 tsp ground ginger
  • 1 cup orange juice
  • 0.3 cup soy sauce
  • 2 cup cooked rice, for serving

Instructions

    Heat oil in a large skillet or wok over medium-high heat.

    Add broccoli and peppers; stir-fry until crisp-tender, about 3 to 4 minutes.

    Add shrimp and stir-fry for 3 to 5 minutes, or until shrimp turn pink.

    Whisk together cornstarch, brown sugar, ginger, orange juice and soy sauce in a small bowl until smooth.

    Pour sauce into skillet. Bring to a boil; cook and stir for 2 minutes or until the sauce is thickened and glossy.

    Serve immediately over hot cooked rice.
