Italian Shrimp Spaghetti Casserole

  • 0.5 lb spaghetti or linguine
  • 0.3 lb butter
  • 1 onion, chopped
  • 2 clove garlic, minced
  • 0.5 bell pepper, diced
  • 1 tbsp crab boil seasoning
  • 2 lb shrimp, peeled and deveined
  • 0.3 cup fresh parsley, chopped
  • 1 tbsp garlic powder
  • 2 bay leaves
  • 1 egg, beaten
  • 0.5 cup grated Parmesan cheese

Instructions

    Cook spaghetti until al dente; drain and set aside.

    Melt butter in a large skillet over medium heat. Sauté onion, garlic, and bell pepper until softened, about 5 minutes.

    Add shrimp, parsley, garlic powder, bay leaves, and crab boil seasoning. Simmer 30–45 minutes over low heat, stirring occasionally. Remove bay leaves.

    Beat egg in a small bowl; stir in 2 spoonfuls of hot shrimp sauce to temper. Pour egg mixture over spaghetti and toss to coat. Stir in Parmesan.

    Add shrimp mixture to spaghetti and toss to combine.

    Preheat oven to 350°F (175°C). Transfer to a covered casserole dish.

    Bake covered 30 minutes. Let cool slightly before serving.
