Shrimp-Rice Casserole

Simple baked shrimp and rice casserole with sautéed onion, bell pepper and celery in diluted mushroom soup, topped with melted cheddar. Slow and easy one-dish meal.

  • 1 medium onion, finely chopped
  • 0.5 medium green bell pepper, finely chopped
  • 1 stalk celery, finely chopped
  • 3 cup cooked rice
  • 10 0.8 oz cream of mushroom soup
  • 0.5 cup milk
  • 12 oz frozen shrimp, cooked and finely chopped
  • 0.5 cup grated cheddar cheese

Instructions

    Sauté onion, bell pepper and celery in a small amount of oil.

    Remove from heat; add rice, mushroom soup diluted with milk, and cooked shrimp.

    Place mixture in a buttered casserole dish.

    Sprinkle grated cheddar cheese over the top.

    Bake uncovered at 300°F for one hour.
