Shrimp and Rice Casserole

  • 0.5 cup chopped celery
  • 0.5 cup chopped green bell pepper
  • 2 tbsp butter
  • 2 cup cooked white rice
  • 2 cup cooked shrimp, cleaned
  • 21 0.5 oz condensed cream of shrimp soup (2 cans)
  • 0.3 cup toasted sliced almonds
  • 0.3 cup dry sherry

Instructions

    Preheat oven to 350°F.

    Sauté celery and bell pepper in butter until soft.

    Combine sautéed vegetables, cooked rice, shrimp, cream of shrimp soup, almonds, and sherry in a greased 2-quart baking dish.

    Garnish with paprika.

    Bake uncovered at 350°F for 20 to 30 minutes until heated through and bubbly.
