Shrimp Newburg

- 1 lb cooked shrimp, deveined
- 4 oz canned mushrooms, drained
- 3 large hard-boiled eggs, peeled and chopped
- 0.5 cup Parmesan cheese, grated, divided
- 4 tbsp butter
- 0.5 medium onion, chopped
- 1 clove garlic, minced
- 6 tbsp all-purpose flour
- 3 cup milk
- 4 tbsp dry sherry
- 1 tsp Worcestershire sauce
- 0.5 tsp salt
- 0.3 tsp black pepper
- 1 dash Tabasco sauce

Preheat oven to 375°F.

In a saucepan, melt butter over medium heat. Sauté onion and garlic until tender, about 4 minutes.

Whisk in flour and cook 1 minute. Gradually whisk in milk, stirring constantly, until sauce thickens and is smooth.

Stir in sherry, Worcestershire sauce, salt, pepper and Tabasco to taste.

In a large bowl, combine shrimp, mushrooms, hard-boiled eggs and parsley. Add sauce along with 1/4 cup of the Parmesan cheese; mix well.

Pour the mixture into a buttered 2-quart casserole dish. Top with remaining Parmesan and dot with extra butter.

Bake for 10 to 15 minutes until slightly browned on top and heated through.
