Shrimp Marinara

  • 1 lb shrimp, fresh or frozen, shelled and cleaned
  • 2 tbsp vegetable oil
  • 0.3 cup celery, chopped
  • 0.3 tsp garlic salt
  • 1 tsp dried oregano
  • 0.3 tsp salt
  • 1/8 tsp cayenne pepper
  • 0.3 tsp sugar
  • 0.5 tsp dried basil
  • 2 tbsp fresh parsley, chopped
  • 28 oz canned diced tomatoes
  • 2 cup cooked rice, for serving

Instructions

    Heat oil in a large skillet over medium heat. Add celery and cook until tender, about 4 minutes.

    Add garlic salt, oregano, salt, cayenne, sugar, basil, parsley and canned tomatoes.

    Cook over low heat, uncovered, until the liquid is reduced and the sauce is slightly thickened, about 30 minutes.

    Add uncooked shrimp to the skillet. Cover and cook for 3 to 5 minutes depending on shrimp size, until pink and cooked through.

    Serve over fluffy hot rice.
