- 20 oz frozen chopped spinach (2 packages), thawed and well drained
- 1 0.5 lb medium shrimp, cooked, shelled and deveined
- 4 tbsp butter
- 0.5 cup all-purpose flour
- 1 0.5 cup milk
- 0.5 cup dry white wine
- 0.3 cup scallions, chopped
- 1 tsp salt, or to taste
- 0.3 tsp black pepper
- 0.5 tsp paprika, or more for color
- 1 cup Cheddar cheese, grated

Preheat oven to 350°F.

Thaw and drain spinach very well, squeezing out excess moisture. Spread spinach in a 13x9-inch baking dish.

Arrange cooked shrimp evenly over the spinach layer.

In a saucepan, melt butter over medium heat. Whisk in flour and cook 1 minute.

Gradually whisk in milk, wine and scallions. Cook, stirring constantly, over low heat until the sauce bubbles and thickens, about 5 minutes.

Season with salt, pepper and enough paprika to give the sauce a rosy color.

Pour the sauce evenly over the shrimp, then sprinkle grated Cheddar on top.

Bake uncovered for 35 minutes or until bubbly and lightly browned. Serve with steamed rice.
