Shrimp Creole

- 2 lb baby shrimp
- 3 tbsp butter
- 1 cup onions, coarsely chopped
- 1 cup green pepper, chopped
- 1 cup zucchini, chopped
- 1 cup celery, chopped
- 2 cloves garlic, pressed
- 4 large tomatoes, chopped
- 8 oz tomato sauce
- 0.5 tsp black pepper
- 1 tsp dried thyme
- 1 tsp honey

In a large saucepan, sauté onion, green pepper, zucchini, and celery in butter until tender.

Add garlic and tomatoes, bring to a boil.

Reduce heat and add tomato sauce, pepper, lemon peel, cloves, bay leaf, thyme, and honey.

Simmer 15-20 minutes, stirring frequently.

Stir in shrimp and heat thoroughly.

Serve over hot rice. Add hot pepper sauce if desired.
