Shrimp Broiled with Rosemary

- 2 lb extra-large shrimp (16-20 per lb), shell on
- 0.3 cup freshly squeezed lemon juice
- 4 tbsp extra-virgin olive oil
- 2 tbsp fresh rosemary leaves, chopped
- 0.5 tsp salt
- 0.3 tsp freshly ground black pepper

Preheat the broiler.

Devein the shrimp without fully peeling by cutting along the shell on the back with scissors and making a shallow slit in the flesh.

Place shrimp in a single layer in a shallow baking dish.

Add the lemon juice, olive oil, and rosemary. Season with salt and black pepper. Toss shrimp well and spread evenly.

Broil for 5 minutes. Turn shrimp and broil 2 to 4 more minutes until pink and cooked through.

Before serving, toss the shrimp in the pan juices. Serve immediately.
