Shrimp and Grits

  • 1 lb shrimp, peeled
  • 2 tbsp fresh lemon juice
  • 3 tbsp bacon grease
  • 1 small onion, finely chopped
  • 0.3 cup green bell pepper, finely chopped
  • 2 tbsp all-purpose flour
  • 1 cup hot water or chicken stock
  • 1 tsp salt
  • 0.3 tsp cayenne pepper
  • 4 cup prepared grits

Instructions

    Sprinkle shrimp with lemon juice, salt, and cayenne and set aside.

    Heat bacon grease in a skillet and sauté onion and pepper over medium heat until onion becomes transparent, about 10 minutes.

    Sprinkle flour over vegetables and stir constantly about 2 minutes, until flour begins to brown.

    Add the shrimp and about 3/4 cup of water or stock, stirring constantly and turning shrimp so they cook evenly.

    Cook another 2-3 minutes until shrimp are cooked through and gravy is smooth.

    Serve immediately over prepared grits.
