  • 0 lb medium-size raw shrimp, with shells on
  • 4 tbsp vegetable oil
  • 4 each thin slices of fresh ginger
  • 3 each scallions, Cut into quarters
  • 2 tbsp dry sherry
  • 4 tbsp dark soy sauce
  • 3 tbsp sugar
  • 2 tsp red wine vinegar
  • 1 each . Remove the legs of the shrimp with scissors. Make an opening in the back
