  • 1 cup uncooked rice
  • 3 tbsp bacon drippings
  • 1 onion, diced
  • 1 bell pepper, chopped
  • 1 clove garlic, minced
  • 1 stalk celery, chopped
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

    1. Brown squirrel in skillet with bacon fat. 2. Remove squirrel from skillet and sauté garlic, onion, bell pepper, and celery in drippings. 3. Return squirrel to skillet. 4. Add remaining ingredients to skillet. Add enough water to fully cook rice. Cover and cook until rice is done and water is absorbed.
