Seven-Layer Ham and Broccoli Casserole

  • 1 0.5 cup cooked rice
  • 1 0.5 cup cubed ham
  • 0.5 medium onion, chopped
  • 1 0.5 cup chopped broccoli, cooked and drained
  • 10 0.8 oz can cream of mushroom soup
  • 1 0.5 cup shredded Cheddar cheese
  • 0.3 cup milk
  • 2 slice sourdough bread
  • 2 tbsp butter or margarine

    Preheat oven to 375°F. Butter a 1½-quart casserole dish.

    Layer the rice, cubed ham, onion, and cooked broccoli in the casserole.

    In a separate bowl, combine the cream of mushroom soup, shredded cheese, and milk. Spread this mixture evenly over the broccoli layer.

    Bake at 375°F for 20 minutes.

    Meanwhile, make coarse bread crumbs by pulsing the bread slices in a blender. Sauté the crumbs in butter over medium-high heat until light brown.

    Sprinkle the toasted crumbs over the casserole. Continue baking 15 minutes longer, until hot and bubbly.
