Radish, Cabbage and Sesame Slaw

A low-carb Atkins recipe for Sesame Slaw.

  • 1 tsp sesame seeds
  • ⅔ cup (60 g) red cabbage, thinly sliced
  • 8 medium radishes, thinly sliced
  • 2 medium green onions, thinly sliced
  • ¼ large cucumber, sliced into narrow 1-inch (3-cm) strips
  • 1 tbsp (1 g) fresh cilantro, roughly chopped
  • 1 tsp tahini
  • 1 tsp lime juice
  • 1 tsp sesame oil
  • 1½ tsp (7 g) mayonnaise
  • 1½ tsp (8 ml) tamari sauce
  • ¼ tsp garlic powder
  • ⅛ tsp black pepper
  • 1 tbsp (15 ml) water

Instructions

    Add the sesame seeds to a dry skillet over low-medium heat and toast gently while shaking the pan or stirring with a spoon for 2 to 3 minutes, until lightly golden. Set aside.

    Add the cabbage, radishes, green onions, cucumber and cilantro to a mixing bowl and stir well.

    In a separate small bowl, add the tahini, lime juice, sesame oil, mayonnaise, tamari sauce, garlic powder and pepper. Beat together, then add the water, a little at a time, stirring until smooth and creamy.

    Spoon the dressing over the vegetables and mix well, coating everything in the mayonnaise.

    Scatter the toasted sesame seeds over the salad and stir through to serve.
