Serrano–Garlic Green (Medium-Hot)

Clean, herby green hot sauce with bright serrano heat and a garlicky snap—great on rich meats, ramen, and dumplings.

  • 10 serranos (≈170 g)
  • 4 garlic cloves
  • 0.5 cup rice or white vinegar (120 ml)
  • 0.5 cup water (120 ml)
  • 1 tsp kosher salt
  • 1 tsp sugar
  • 0.5 tsp toasted cumin seed (or 1/4 tsp ground)
  • 1 Optional: 1 small green apple, chopped

    Simmer everything 8–10 minutes (add apple if using).

    Blend until ultra-smooth; thin with a splash of water if needed, then bottle.

    Stir into pho or pozole just before serving.

    Swap serranos for jalapeños to drop the heat a notch.

    For a more sauce like texture, sift the pulp. For a salsa like texture, keep it.
