Seared Spicy Citrus Chicken

- 2 lb boneless, skinless chicken thighs
- For the marinade:
- 0.3 cup fresh lime juice
- 2 tsp lime zest
- 0.3 cup honey
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 0.5 tsp sea salt
- 0.5 tsp black pepper
- 2 garlic cloves, minced
- 0.3 tsp onion powder

Whisk together marinade ingredients in a large mixing bowl; reServings 2 tablespoons of the marinade for basting. Add chicken and marinade to a sealable plastic bag and marinate 8 hours or overnight in the refrigerator. Preheat griddle to medium high heat and brush lightly with olive oil. Place chicken on griddle and cook 8 minutes per side. Baste each side of chicken with reServingsd marinade during the last few minutes of cooking; chicken is done when the internal temperature reaches 165°F. Plate chicken, tent with foil, and allow to rest for 5 minutes. Servings and enjoy!
