Seafood Kabobs

  • 0.8 cup olive oil, divided
  • 1 tbsp white wine vinegar
  • 1 tbsp fresh lime juice
  • 1 count lime, zest grated
  • 1 0.5 tbsp fresh mint, finely chopped
  • 1 0.5 tbsp fresh parsley, finely chopped
  • 1 count clove garlic, finely chopped
  • 2 tbsp fresh ginger, grated
  • 1 0.3 lb sea scallops
  • 3 count green or yellow bell peppers, cut into 1-inch pieces
  • 32 count cherry tomatoes
  • 32 count small mushrooms, stems removed
  • 2 count red onions, peeled and cut into 1-inch pieces

Instructions

    In a large bowl, whisk together 1/2 cup olive oil, vinegar, lime juice, lime zest, mint, parsley, garlic, and ginger.

    Add scallops to the marinade and stir to coat. Cover and refrigerate for 2 to 3 hours.

    If using bamboo skewers, soak them in hot water for 30 minutes. Prepare a charcoal or gas grill.

    Drain scallops, reserving the marinade.

    Thread seafood onto skewers, alternating with bell pepper pieces, cherry tomatoes, mushrooms, and red onion. Brush with the remaining 1/4 cup olive oil.

    Grill over hot coals for 3 to 5 minutes, turning frequently and brushing with the reserved marinade, until scallops are cooked through.
