Schlotzsky's Deli Rolls
Copycat Schlotzsky's Deli signature sandwich buns — a soft, lightly chewy yeast roll baked in pie pans dusted with cornmeal, with a tender crust that's soft inside and perfect for deli sandwiches.
Ingredients
- 0.5 cup lukewarm water
- 1 tbsp sugar
- 1 package active dry yeast
- 0.8 cup lukewarm milk
- 0.5 tsp salt
- 0.3 tsp baking soda
- 2 0.5 cup all-purpose flour
- 2 tbsp yellow cornmeal (for dusting pans)

In a measuring cup, stir together water, sugar, and yeast. Let stand until it bubbles to the top of the cup, about 10 minutes.

Dissolve baking soda in ½ tbsp warm water. In a medium bowl, combine milk, salt, soda-water mixture, and 1 cup flour; whisk until smooth.

Beat in the yeast mixture, then add remaining flour using a sturdy spoon. Batter should be thick, sticky, and smooth.

Spray two small pie pans with non-stick spray and dust with cornmeal. Divide dough between the pans. Cover with sprayed plastic wrap and let rise about 1 hour.

Preheat oven to 375°F (190°C). Remove plastic wrap and discard. Spray tops of buns with non-stick spray.

Bake on center rack 20 minutes until golden brown. Cool in pans on a rack 20 minutes. Spray tops with more non-stick spray to keep crust soft. Cool 1 hour before slicing.
