Scallops Provencal

  • 2 tsp olive oil
  • 1 lb sea scallops
  • 0.5 cup thinly sliced onion, separated into rings
  • 1 garlic clove, minced
  • 1 cup diced tomatoes
  • 0.3 cup chopped ripe olives
  • 1 tbsp dried basil
  • 0.3 tsp dried thyme
  • 1/8 tsp salt
  • 1/8 tsp freshly ground pepper

    Heat olive oil in a large nonstick skillet over medium-high heat. Add scallops and sauté 4 minutes until just cooked. Remove with a slotted spoon and keep warm.

    Add onion rings and garlic to the skillet; sauté 1–2 minutes.

    Add tomatoes, olives, basil, thyme, salt, and pepper. Sauté 2 more minutes until tender.

    Spoon sauce over scallops and serve.
