Sbarro Tomato Sauce

  • 56 oz crushed tomatoes (two 28-oz cans)
  • 28 oz cold water (one can's worth)
  • 4 oz grated Romano cheese
  • 12 oz olive oil
  • 10 oz diced onions
  • 1 oz chopped fresh garlic
  • 0.5 oz chopped fresh Italian parsley
  • 3 oz sherry cooking wine
  • 2 tbsp salt
  • 2 tsp dried oregano
  • 0.5 tsp crushed red pepper flakes
  • 0.5 tsp black pepper
  • 2 tsp dried basil

Instructions

    Heat olive oil in a large pot until hot but not smoking. Add onions and sauté until almost browned.

    Add garlic and cook until golden. Deglaze the pan with sherry wine. Add parsley and stir.

    Add crushed tomatoes, water, Romano cheese, and all spices. Mix well.

    Bring just to a boil, then reduce heat and simmer uncovered for 1 hour, stirring occasionally.

    Taste and adjust seasoning. Use immediately over pasta, or cool and refrigerate up to 1 week.
