Ingredients

Servings
4
  • 1 lb fresh Italian sausage, removed from casing
  • 1 small onion, peeled and julienned
  • 1 small green bell pepper, seeded and julienned
  • 1 small red bell pepper, seeded and julienned
  • 2 tbsp chopped garlic
  • 8 oz ricotta cheese
  • 8 oz grated mozzarella cheese
  • 8 oz grated Parmigiano-Reggiano cheese
  • 1 pinch crushed red pepper
  • 4 rounds individual 6-inch pizza dough rounds
  • 2 tbsp olive oil

Instructions

  1. 1

Preheat oven to 375°F. In a sauté pan over medium heat, add 1 tablespoon olive oil. Brown the sausage, about 6–8 minutes. Drain and cool completely.

  2. 2

In another pan, sauté onions and peppers in remaining oil with salt and pepper for 4–5 minutes. Add garlic, remove from heat, and cool completely.

  3. 3

In a mixing bowl, combine sausage, onion-pepper mixture, all three cheeses, and crushed red pepper. Mix well and season with salt.

  4. 4

Using a fork, dock each pizza dough round. Divide filling into 4 portions and place in the center of each round.

  5. 5

Fold the dough over to form a half-moon shape. Press edges firmly with a fork to seal completely.

  6. 6

Place on a parchment-lined baking sheet and bake until golden brown, about 20–25 minutes.
