Sausage And Sweet Pepper Calzones
Plump baked calzones filled with Italian sausage, julienned sweet peppers, and a trio of ricotta, mozzarella, and Parmigiano-Reggiano cheeses—golden and bubbling.
Ingredients
- 1 lb fresh Italian sausage, removed from casing
- 1 small onion, peeled and julienned
- 1 small green bell pepper, seeded and julienned
- 1 small red bell pepper, seeded and julienned
- 2 tbsp chopped garlic
- 8 oz ricotta cheese
- 8 oz grated mozzarella cheese
- 8 oz grated Parmigiano-Reggiano cheese
- 1 pinch crushed red pepper
- 4 rounds individual 6-inch pizza dough rounds
- 2 tbsp olive oil

Preheat oven to 375°F. In a sauté pan over medium heat, add 1 tablespoon olive oil. Brown the sausage, about 6–8 minutes. Drain and cool completely.

In another pan, sauté onions and peppers in remaining oil with salt and pepper for 4–5 minutes. Add garlic, remove from heat, and cool completely.

In a mixing bowl, combine sausage, onion-pepper mixture, all three cheeses, and crushed red pepper. Mix well and season with salt.

Using a fork, dock each pizza dough round. Divide filling into 4 portions and place in the center of each round.

Fold the dough over to form a half-moon shape. Press edges firmly with a fork to seal completely.

Place on a parchment-lined baking sheet and bake until golden brown, about 20–25 minutes.
