Sausage Hash Brown Bake

  • 2 lb pork sausage
  • 2 cup shredded Cheddar cheese, divided
  • 10 0.8 oz can cream of chicken soup, undiluted
  • 8 oz carton French onion dip
  • 1 cup onion, chopped
  • 0.3 cup green bell pepper, chopped
  • 0.3 cup red bell pepper, chopped
  • 1/8 tsp black pepper
  • 30 oz package frozen shredded hash brown potatoes, thawed

Instructions

    Preheat oven to 350°F. Grease a shallow 3-quart baking dish.

    In a large skillet, cook the sausage over medium heat until browned. Drain well.

    In a large bowl, combine 1 cup of the cheese, cream of chicken soup, French onion dip, onion, green and red bell peppers, and black pepper. Fold in the thawed hash brown potatoes.

    Spread half of the potato mixture in the prepared baking dish. Top with the cooked sausage.

    Spread the remaining potato mixture over the sausage layer. Sprinkle the remaining 1 cup of cheese on top.

    Cover and bake at 350°F for 45 minutes. Uncover and bake 10 minutes longer, or until heated through and cheese is golden.
