Sausage Grits Casserole

  • 1 lb hot pork sausage
  • 12 oz Cheddar cheese, grated
  • 3 large eggs large eggs, beaten
  • 1 0.5 cup milk
  • 4 oz jar chopped pimento
  • 3 tbsp butter or margarine
  • 3 cup cooked grits
  • 1 small onion, chopped

Instructions

    Preheat oven to 350°F.

    In a skillet, cook the sausage and onion until the sausage is fully cooked. Drain well.

    Spread the cooked sausage evenly in a lightly greased casserole dish.

    Cook the grits according to package directions. Add cheese and butter, stirring until both are fully melted.

    In a separate bowl, beat the eggs with the milk. Stir the egg mixture into the grits. Add pimento and stir to blend.

    Pour the grits mixture over the sausage layer in the casserole.

    Bake for 1 hour, or until the top is set and lightly golden.

    Let rest 5 minutes before serving.
