Sausage and Vegetable Scramble

  • 8 eggs, beaten
  • 1/2 lb sausage, sliced into thin rounds or chopped
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 1 cup white mushrooms, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • vegetable oil

Instructions

    Preheat the griddle to medium-high heat.

    Brush the griddle with vegetable oil and add the peppers and mushrooms. Cook until lightly browned and then add the onions. Season with salt and pepper and cook until the onions are soft.

    Add the sausage to the griddle and mix with the vegetables. Cook until lightly browned.

    Add the eggs and mix with the vegetables and cook until eggs reach desired doneness. Use a large spatula to remove the scramble from the griddle and serve immediately.
