Sausage and Tomato Tortellini Soup
A robust Italian sausage and vegetable soup loaded with fresh tortellini, zucchini, mushrooms, and tomatoes — best served with garlic bread.

- 1 lb mild Italian sausage
- 2 cloves garlic, crushed
- 7 cup beef stock
- 0.3 cup fresh parsley, chopped
- 1 onion, cut in eighths
- 2 zucchini, sliced
- 2 carrots, sliced
- 1 can 8-oz tomato sauce
- 1 can whole peeled tomatoes, crushed
- 1 can 8-oz sliced mushrooms
- 1 package fresh cheese tortellini
- 1 tbsp grated parmesan or romano cheese, to serve
Instructions

Brown sausage in skillet, adding garlic when grease has begun to bleed so it doesn't burn. Drain sausage.

Add sausage to beef stock. Add parsley, onion, carrots, tomato sauce, and tomatoes (squeeze gently as you drop them in).

Cook for about 30 minutes.

Add zucchini and mushrooms and cook until zucchini is tender.

Add tortellini and cook until done, about 2–3 minutes. Spoon into bowls, garnish with grated cheese, and serve with garlic bread.
