Santa Fe Ramen Soup
A quick Southwestern ramen soup with pork, golden hominy, roasted chiles, and a garnish of crispy tortilla strips.

- 6 oz lean pork, cut into thin strips
- 2 tsp vegetable oil
- 4 cup water
- 1 whole medium tomato, chopped
- 14 0.5 oz canned golden hominy with liquid
- 4 oz whole roasted chiles, cut into strips (1 can)
- 2 pkgs beef-flavor ramen noodles (with seasoning packets)
- 2 whole corn tortillas, cut into strips and baked until crisp
- 2 whole green onions, sliced
Instructions

Brown the pork strips in hot oil in a large saucepan.

Add water, tomato, hominy with liquid, chiles, and ramen seasoning packets.

Break the ramen noodles and add them to the pot. Cook for 3 minutes.

Garnish each bowl with crispy tortilla strips and sliced green onions. Serve immediately.
