Salt River Skillet Meal
One-pan Southwestern ground beef skillet with browned vermicelli, garlic, onion, celery, corn and tomatoes, finished with melted American cheese slices on top.

- 2 tbsp shortening
- 6 oz vermicelli, broken
- 1 lb ground beef
- 2 clove garlic, minced
- 2 small onions, thinly sliced
- 1 medium green bell pepper, finely chopped
- 4 stalks celery, thinly sliced
- 1 cup whole kernel corn
- 2 tsp salt
- 0.5 tsp pepper
- 2 tsp chili powder
- 14 oz canned tomatoes
- 0.8 cup water
- 8 oz American cheese slices

Melt shortening in skillet. Sauté dry vermicelli noodles until lightly browned, stirring occasionally.

Add beef and cook, stirring, until meat loses its red color.

Stir in garlic, onions, bell pepper, celery, corn, salt, pepper and chili powder.

Add tomatoes and water; stir gently. Cover and simmer for 25 minutes.

Place cheese slices on top of mixture. Cover and cook 5 minutes until cheese is melted.
