Salsa Shrimp

  • 1 0.3 lb shrimp, shelled and deveined
  • 2 count medium zucchini, sliced
  • 1 0.5 cup chunky salsa
  • 4 oz feta cheese, crumbled
  • 1 cup fresh cilantro, chopped
  • 3 cup cooked couscous

Instructions

    Spray a large frying pan with cooking spray and heat over medium-high heat until hot.

    Add shrimp and sauté until just starting to firm up and turn pink, about 1 minute.

    Add sliced zucchini and cook for an additional minute.

    Add the salsa and continue to cook until heated through but the zucchini is still firm, about 1 more minute.

    Top with crumbled feta and chopped cilantro.

    Serve over couscous.
