  • 0.3 cup sherry vinegar
  • 1 tbsp honey
  • 0.3 cup minced shallots
  • 1 tsp Dijon mustard
  • 0.5 pint red currant tomatoes, washed
  • 0.5 pint yellow teardrop tomatoes, washed
  • 0.5 cup julienned Vidalia onions
  • 4 count small bunches fresh watercress, cleaned

Instructions

    In a bowl, whisk together olive oil, sherry vinegar, honey, shallots, and Dijon mustard. Season with salt and pepper.

    Add tomatoes and Vidalia onions to the vinaigrette. Cover and marinate for 1 hour.

    Toss marinated vinaigrette and tomatoes with the watercress. Season with salt and pepper.

    Mound the salad in the center of each serving plate.
