A vibrant salad of fresh watercress tossed with marinated red currant and yellow teardrop tomatoes in a honey-sherry vinaigrette with Vidalia onions.

- 0.3 cup sherry vinegar
- 1 tbsp honey
- 0.3 cup minced shallots
- 1 tsp Dijon mustard
- 0.5 pint red currant tomatoes, washed
- 0.5 pint yellow teardrop tomatoes, washed
- 0.5 cup julienned Vidalia onions
- 4 count small bunches fresh watercress, cleaned

In a bowl, whisk together olive oil, sherry vinegar, honey, shallots, and Dijon mustard. Season with salt and pepper.

Add tomatoes and Vidalia onions to the vinaigrette. Cover and marinate for 1 hour.

Toss marinated vinaigrette and tomatoes with the watercress. Season with salt and pepper.
