Sal's Zeppolis
Classic Italian-American fried sweet dough puffs, made from a simple yeast batter, fried golden and tossed in powdered sugar — irresistible and festive.

- 2 count packages instant yeast (¼ oz each)
- 0.5 cup warm water
- 3 tbsp butter, melted
- 3 count egg yolks
- 2 cup flour
- 0.5 cup sugar
- 1 tsp salt
- 2 cup additional all-purpose flour
- 1 cup milk (up to 1½ cups)
- 2 quart vegetable oil, for frying
- 1 cup confectioners' sugar, for dusting

In a medium bowl, whisk yeast and warm water together. Add butter and egg yolks; whisk well.

Add flour, sugar, and salt; whisk until combined. Add milk a little at a time until the mixture resembles a batter. Cover and let rest 1 hour.

Preheat oil to 360°F. Using a spoon, drop batter into hot oil. Fry until golden brown, about 3 to 4 minutes.

Remove and drain on paper towels. Place fried zeppolis in a paper bag with powdered sugar; shake a couple times.
