Rusty's Pork Chop and Rice Casserole
Browned pork chops arranged over uncooked rice with fresh mushrooms, thyme, and chicken broth, then baked covered until the rice absorbs all the savory juices.

- 6 pork chops, about ½ inch thick
- 1 to taste salt and freshly ground black pepper
- 0.8 cup uncooked long grain white rice
- 12 oz sliced fresh mushrooms
- 1 cup chicken stock or broth
- 1 tsp dried thyme

Preheat oven to 350°F.

Brown pork chops thoroughly in a skillet. Season with salt and pepper.

Spread uncooked rice over the bottom of a greased baking dish.

Arrange chops over the rice. Top with mushroom slices.

Add thyme to chicken stock and mix. Pour stock over all. Bake covered for 1 hour — do not peek.
