Rustic Rice Pudding

  • 2 cup whole milk
  • 1/3 cup uncooked long-grain white rice, plus 1 tbsp
  • 1 pinch salt
  • 1/3 cup granulated sugar, plus 1 tsp
  • 1 0.5 egg yolks
  • 0.5 tsp pure vanilla extract
  • 0.3 tsp ground cinnamon
  • 1 pinch freshly grated nutmeg
  • 0.3 cup golden raisins
  • 0.3 cup heavy cream
  • 1 tbsp dark rum

Instructions

    In a saucepan over medium heat, combine the milk, rice, and salt. Simmer for 30 minutes until the rice is very tender.

    In a bowl, mix together ⅓ cup sugar, egg yolks, vanilla, cinnamon, and nutmeg.

    When the rice is done, stir the raisins and the sugar-egg mixture into the rice. Cook over medium heat, stirring constantly, for about 4 minutes until thick. Remove from heat and cool completely.

    In a bowl, beat the cream with 1 teaspoon sugar and the rum to soft peaks. Fold in the cooled rice mixture.

    Divide into 4 serving cups or glasses. Refrigerate for at least 1 hour. Serve chilled.
