  • 1 cup stale bread crumbs
  • 11/2 cups scalded milk
  • 3 hard-boiled egg yolks
  • Breast meat from a boiled chicken
  • 21/2 tablespoons butter
  • 21/2 tablespoons flour
  • Salt and pepper

Instructions

    Soak bread crumbs in milk

    add yolks of eggs rubbed through a sieve and chicken meat also rubbed through a sieve

  3. 3

    add gradually milk, and chicken stock highly seasoned

  4. 4

    bind with butter and flour cooked together

  5. 5

    season with salt and pepper
