- ½ cup shortening
- ½ cup brown sugar
- ½ cup white sugar
- 1-2 eggs
- 1 cup pumpkin
- ½ teaspoon salt
- 1 teaspoon vanilla
- 1 cup flour
- 1 teaspoon baking powder
- 1 teaspoon soda
- 1 teaspoon cinnamon
- Ginger, cloves, allspice, if desired
- 1 cup raisins, dates, coconut, or ½ cup nuts, as desired
Instructions

Cream shortening and sugars until fluffy.

Add eggs, pumpkin, salt, and vanilla; mix.

Sift together flour, baking powder, soda, and spices.

Add to mixture.

Add raisins, dates, coconut, or nuts as desired.

Drop by teaspoons on greased cookie sheet.

Bake at 375º for 8-10 minutes.
