Rock's Skillet Eggs

- 6 oz bacon, chopped
- 0.5 cup chopped yellow onions
- 0.5 cup chopped green bell peppers
- 0.5 tsp salt, to taste
- 0.3 tsp freshly ground black pepper
- 1 tsp chopped garlic
- 2 cup small-diced Idaho potatoes, peeled and blanched
- 1 cup fresh tomatoes, peeled, seeded, and chopped
- 4 oz Cheddar cheese, grated
- 8 large eggs
- 4 slice hot French bread, for serving

In a large non-stick pan over medium heat, render the bacon until crispy, about 6 minutes.

Add the onions and green peppers; season with salt and pepper. Cook for 2 minutes. Add the garlic, blanched potatoes, and tomatoes; sauté for 3 to 4 minutes.

Sprinkle the Cheddar cheese evenly over the top of the potato mixture.

Crack the eggs directly into the pan, spacing them a couple of inches apart. Cover the pan and let the eggs poach to your desired doneness — about 3 to 5 minutes for set whites with runny yolks.

Remove from heat and cut into pie-shaped wedges. Serve directly from the pan with hot French bread.
