Roast Chicken

  • 2 whole broiler chickens, 3 1/2 lbs. each
  • 0.5 cup butter or margarine
  • 1/3 dry white wine, or chicken broth
  • 2 tbsp rosemary leaves, crushed
  • 2 tbsp tarragon leaves, crushed
  • 1 tsp salt
  • 0.5 tsp fresh ground pepper
  • 2 cup cooked rice, or wild rice mix
  • 1 fresh pear, washed, cored and chopped

    Combine rosemary and tarragon with wine in small bowl. Let stand 1 hour. Strain and reserve liquid. Blend butter into herbs.
