- 2 whole broiler chickens, 3 1/2 lbs. each
- 0.5 cup butter or margarine
- 1/3 dry white wine, or chicken broth
- 2 tbsp rosemary leaves, crushed
- 2 tbsp tarragon leaves, crushed
- 1 tsp salt
- 0.5 tsp fresh ground pepper
- 2 cup cooked rice, or wild rice mix
- 1 fresh pear, washed, cored and chopped

Combine rosemary and tarragon with wine in small bowl. Let stand 1 hour. Strain and reserve liquid. Blend butter into herbs.
