Rich Vegetable Soup
A hearty tomato-based beef and vegetable soup with kidney beans — quick to make and absolutely delicious with garlic bread.

- 1 lb lean ground beef
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 can whole tomatoes (12 oz each)
- 1 can tomato sauce (12 oz)
- 1 can tomato paste (8 oz)
- 4 medium carrots, sliced
- 1 green pepper, cut up
- 1 can large kidney beans, drained and rinsed

In a large pot, sauté onions and garlic in olive oil.

Add the ground beef and cook until brown.

Add the tomatoes, carrots, and green pepper. Simmer for about 20 minutes.

Add the kidney beans and simmer for about 10 minutes more.

Serve with garlic bread and a salad.
