Rice Waffles

  • 3 0.3 cup flour
  • 2/3 cup cold cooked
  • 5 0.5 cup milk
  • 4 teaspoons baking
  • powder
  • rice
  • 1/4 teaspoon salt
  • 1 tablespoon melted

Instructions

    Combine the rice and 21/4 cups water in a medium saucepan.

    Bring to a boil, then reduce heat to simmer until cooked.

    Heat your mini waffle maker and grease with a little cooking spray.

    Scoop about ⅓ cup rice into the waffle maker and flatten it down.

    Cook for about 5-6 minutes.

    Add the eggs into the well, using a spatula or wooden spoon to break the yolks and scramble the eggs, cooking while stirring just the egg occasionally to form small, fluffy curds.
