Rice and Sour Cream Casserole

Creamy layered rice casserole with sour cream, green chiles and parsley, sandwiched between two kinds of melted cheese. A simple, satisfying Southwestern side.

  • 2 cup sour cream
  • 3 cup cooked rice
  • 1 cup green chile, chopped
  • 1 tbsp parsley, chopped
  • 1 cup grated Monterey Jack cheese
  • 1 cup grated cheddar cheese
  • 0 salt and pepper to taste

Instructions

    Mix sour cream, rice, green chile, salt, pepper and parsley together.

    Spoon half the mixture into a lightly greased casserole dish.

    Mix the two cheeses together; sprinkle half over the rice mixture.

    Top with the remaining rice, then the rest of the cheese.

    Bake at 350°F for 30 minutes.
