- 2 tsp vanilla
- 2 cup rhubarb, finely diced
- 1 egg ½ cup pecans (I leave nuts out.)
- 1 cup buttermilk 1 teaspoon cinnamon
- 2 ½ cups flour

- ½ cup salad oil 1 teaspoon baking powder
- ½ teaspoon salt 1 teaspoon melted butter

Preheat the oven to 350 degrees F (175 degrees C).

Grease two 12-cup muffin pans or line with paper cups.

Stir flour, baking soda, baking powder, and salt together in a medium bowl.

In a separate medium bowl, combine the wet ingredients.

Create a well in the center of the flour mixture and pour in the wet ingredients.

Stir just until the ingredients are combined.

Add the rhubarb and set aside.
