Rhubarb Chutney

  • 8 cup rhubarb, finely chopped
  • 0.5 cup chopped onion
  • 0 cup chopped raisins
  • 0 cup brown sugar
  • 0.5 cup vinegar
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1 tsp allspice

Instructions

    Cook first 5 ingredients until thick, about 25 minutes, stirring frequently.

    Add salt, cinnamon, ginger and allspice and cook 5 minutes longer.

    Pour boiling hot into hot sterilized jars, leaving 1/8-inch headspace.

    Seal immediately.

    Makes 4 pints.
